Mesa De Vida Caribbean Chicken and Rice

For a quick weeknight dinner, I like to incorporate authentic sauce starters to speed up my dinner preparation.  I really enjoy the range from Mesa De Vida because they are flavorful, made with good ingredients, and good for you.  This very simple chicken sauté is served over long grain rice with some vegetables on the side.  I can have the complete dinner on the table in 1-hour time, and still have a dinner that I can enjoy.  I am not one for shortcuts, but when the timesaving doesn’t come at the expense of flavor, you can twist my arm.  I served this with broccoli sautéed with garlic and olive oil.

1 Jar Mesa De Vida Caribbean Sauce Concentrate

2 Pounds chicken breast but into 1-inch dice

8 0z. Chicken stock

½ cup of diced green or red pepper

Olive oil

Cut the chicken into 1-inch dice, and also dice the peppers.  Heat a skillet over medium heat and add 1 tablespoon of olive oil.  Place chicken in olive oil and toss to brown a little for around 4 minutes.  Add chopped peppers and continue to sauté for 2 more minutes.  Add 1 jar of the Mesa De Vida Caribbean sauce concentrate and add chicken broth to the pot.  Cover and simmer for 45 minutes.  About halfway through check the pot to see how much liquid there is.  You want the finished dish to be somewhat thick so that it can coat the back of a spoon.  If it seems like it is not thick, keep the lid off the pot for the remainder of the cooking time (be prepared for a beautiful aroma in your kitchen).

Prepare some long grain rice like Basmati according to the directions.  Prepare your vegetable… I usually serve with salad or sautéed vegetables.

Spoon the chicken over the rice and serve.
