Casa M. Spice makes a complete line of ground spices that are based on authentic recipes. This recipe for Al Pastor is fantastic with pork, which is the traditional dish in Mexico. It also works well with chicken or beef.
Al Pastor Marinade Ingredients:
3.5 oz. Chipotles in Adobo
4 Whole cloves
4 oz. Achiote (annatto seed)
8 Cloves garlic
½ Oz. Pasilla Chile ground
½ Oz. Ancho Chile ground
1 oz. Casa M Spice Chain Reaction spice blend
¾ oz. Casa M Spice Cattle Drive spice blend
1 Cup pineapple juice
1 Cup cider vinegar
For the Skewers:
4 lbs skinless boneless chicken breast cut into 1-inch chunks
1 pineapple cut into bite-size pieces
Lime Wedges, salsa, and cilantro for garnish
Tortillas or rice to serve
Cut chicken into cubes. In a large bowl combine the marinade ingredients. Toss to coat. Cover with plastic wrap and place in the refrigerator for at least 4 hours or up to 24 hours.
When ready to cook, remove chicken from the marinade and thread it onto skewers alternating with pineapple. Grill over high heat until the chicken is cooked through.
To serve the cooked chicken you can present it on a bed of rice or you can make traditional tacos. If making tacos cut the chicken and pineapple into smaller pieces and top with cilantro, squeeze of lime, and salsa.
