I do enjoy the flavor that the smoker gives to all sorts of proteins.  This preparation with chicken breasts doesn’t take very long, but it tastes fantastic.  It can also be made ahead, pulled, and saved in the refrigerator.  When your ready to serve you can just put in a saucepan with some warm sauce and your ready to roll.  I also use Buttercraft Provision Roasted Jalapeno butter for the toasted roll to give it extra flavor.

Ingredients

Caroline Style BBQ Sauce – I used Carolina Gold from Trader Joes

Chicken spice rub – I use Casa M Spice Pecking Order

4 chicken breasts (about 1.5 pound package)

Recipe

Preheat your smoker to 225 degrees, and load some hickory wood chips into your smoker box or wood chip burner.  Season chicken breasts on both sides with spice rub.  Put in smoker and cook for 2 hours.

Remove from the smoker and pull the chicken.  Toast the buns, and smear with butter (I am using Butter Craft Provisions Jalapeno butter).  Place the pulled chicken in a saucepan or fry pan, and pour sauce over the chicken.  Heat stirring constantly for a few minutes to incorporate the sauce in the chicken and heat it through.  Top bun with chicken and a shaking of Casa M Spice Pecking Order.

Serve with potato salad or Cole slaw.
